Asparagus Salad

• Asparagus spears
• 3 tablespoons lemon juice
• Fresh chopped mint leaves or parsley
• 2 tablespoons caper juice
• 1 tablespoon finely minced red onion
• Salt and pepper to taste

Directions:

Lightly steam asparagus until desired tenderness.
Marinate in juices and spices for at least 30 minutes.

Variations:
Add marinade of your choice.
Makes one serving

Phase 3 modifications: Add olive oil or melted butter.
